This simple casserole combines tender chicken, creamy buffalo mozzarella, and fresh basil and cherry tomatoes for a delicious meal. Here’s how to make it:
- Cook rigatoni pasta until al dente. Drain and set aside.
- Pour the pasta into a baking dish, top with extra cheese if you like. Add dried tomato paste.
- Bake at 190°C for 20 minutes.
- Cook chicken breast in a fry pan with garlic and bimi (like baby broccoli) until the chicken is golden then cut into slices.
- Put the chicken slices on top of the pasta and cover with mini buffalo mozzarella balls, sliced cherry tomatoes and fresh basil.
- Decorate with some balsamico cream vinegar to give it some extra flavour.
